"Santi Valpolicella Classico Superiore is a "ripasso" method Valpolicella; meaning that following primary fermentation the wine sees a second fermentation with the addition of Amarone grapes and skins, creating a richer, more complex and more exciting final wine. Cherry, spice and earth drive the Solane on the bouquet as well as the palate. The wine is medium in body, soft in the mouth and finishes clean and dry. This wine shows the elegant, drier style of Ripasso." Pair with red meats (burger or bolognese), game, aged/seasoned cheeses, and pizza.
